Texas Christmas Pickles?
After making two gallons of these little gems, I would like to put them in pint jars to give away as gifts. My question is about processing them in a hot water bath when neither the pickles or the juice they are in when finished is hot. I’ve read somewhere to process them for 10 minutes… I’m not sure that we bring them up to a high enough temp. to have the lids seal. If you have done this, perhaps you could let me know if this is enough time.
I would drain them and reserve the juice. Bring the juice to a boil. Sterilize your new jars then add the pickles and put them into a cake pan, over heat, filled about half way up the jars with boiling water and pour the juice over the pickles again and place the lids on adding the rings just finger tight. Remove from the water bath right away and let set at room temp. After the lids set (pop down) tighten the rings better. This should work.
